Shown here with my red curry simmer sauce, this rice is simple to make and doubles perfectly for serving large dinner parties, or just wanting to have leftovers. Trust me, you'll want leftovers of this rice! Spice Hunter sells dried lemongrass in a spice jar for a few dollars, which is much less expensive than fresh and much easier to use.
| 1 | c | jasmine rice (rinsed) |
| 1 1⁄4 | c | water |
| 1⁄2 | c | Coconut Milk |
| 1 | t | salt |
| 1⁄2 | t | mint (dried) |
| 1⁄2 | t | lemongrass (dried) |
| 1⁄2 | t | white vinegar |
Place all ingredients in medium simmer pot. Stir to combine. Bring to a boil, reduce to a low simmer and cook covered for 25-30 minutes or until liquid has absorbed. Let sit covered 5 minutes off heat. Remove cover, stir and serve.
