A perfect side dish for fish tacos, or any Mexican/Spanish style main course. Although it's not usually my policy, I used instant rice in this recipe and was amazed as to how easy and delicious it was.
| 2 | c | instant rice, brown or white |
| 2 | c | water |
| 3 | T | tomato paste |
| 1 | t | white vinegar |
| 1 | t | salt |
| 1⁄4 | t | onion powder |
| 1 | t | cumin |
In a small or medium saucepan, whisk together water, tomato paste, vinegar and spices. Bring water to a boil. Stir in rice, reduce to simmer and simmer covered for 5 minutes. Remove pan from heat and keep covered for 5 minutes. Stir well and serve.
